My wife and I started making our magical dessert after noticing a lack of clean-ingredient, environmentally friendly (and tasty!) freeze-dried ice cream available for today’s health-conscious customer.
Before a camping trip to the Rocky Mountains in 2017, we purchased some supplies and snacks to bring on the trails. Feeling nostalgic, we got some freeze-dried ice cream as a fun dessert. We both had tried ‘astronaut ice cream’ in our childhood from science museums, and they were fond memories. Unfortunately, we quickly found out that our adult palates were offended by the freeze-dried ice cream. We’ve had great ice cream in our lives, and this was obviously not it. The reason was immediately clear to us: the ingredient list was long and scary. We could do better.
After many months of research and testing, I made my first satisfactory batch of Vanilla and officially became the Quantum Chef. I created thirty-three flavors and spent a full year traveling around Colorado, gathering opinions and smiles the whole way. Quantum Cream™ was made available to the national market in late 2019.
As of 2022, we are proud to announce that our determination and creativity has allowed us the success of opening our own brick and mortar location in Lafayette, CO where we have our own commercial kitchen and storefront, Folkal Pointe: Local Emporium & Fundraising. Our products can now be found locally around Colorado at these retailers and we continue to add to the list!
